Sweet Pea Chicken Recipe


Ingredients

  • 2 boneless, skinless chicken breasts

  • 2 tbsp olive oil

  • Salt and pepper, to taste

  • 1 medium onion, finely chopped

  • 2 garlic cloves, minced

  • 1 cup fresh or frozen peas

  • 1 cup heavy cream

  • 1/2 cup chicken broth (low-sodium)

  • 1 tbsp fresh lemon juice

  • 1 tsp lemon zest

  • 1/4 cup grated Parmesan cheese (optional, for added flavor)

  • Fresh parsley, Mint chopped or micro herbs (for garnish)


Instructions:

  1. Prepare the chicken:

    • Season both sides of the chicken breasts with salt and pepper. Over medium-high heat, add the olive oil in a large skillet . Once the pan is hot, add the chicken breasts and cook for about 4mins minutes per side, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F). Remove the chicken from the pan and set aside.

  2. Make the sauce:

    • In the same skillet, add the chopped onion and sauté for 2-3 minutes until soft and translucent. Add the minced garlic and sauté for an additional 30 seconds until fragrant.

    • Stir in the peas and cook for 3 minutes, letting them soften slightly. NB (If you’re using frozen peas, you might need to cook them a bit longer to heat through.)

  3. Add the creamy mixture:

    • Pour in the heavy cream, chicken broth, lemon juice, and lemon zest. Stir well to combine, scraping any browned bits from the bottom of the pan. Bring the mixture to a simmer and let it cook for 3 minutes until the sauce thickens slightly.

  4. Finish the dish:

    • Return the chicken breasts to the pan, spooning some of the sauce over the top. Let the chicken simmer in the sauce for an additional 5 minutes to absorb the flavors.

    • If desired, sprinkle with Parmesan cheese for an extra layer of richness. Garnish with freshly chopped parsley or mint for a pop of color and freshness.

Tips & Variations

  • Chicken Thighs: If you prefer darker meat, you can use boneless, skinless chicken thighs instead of breasts for a juicier, more flavorful result. ( As seen in photo)

  • Herb Additions: Fresh thyme, rosemary, or basil can be added to the sauce to elevate the flavor profile.

  • Low-fat Version: For a lighter version, substitute the heavy cream with a reduced-fat version or use Greek yogurt for a tangy twist.

  • Creamy Pea Sauce Version: You can pass some of the pea mixture through a food processor or hand blender to create a rich light green creamy sauce as seen in photo. Then top it off with the renaming un-blended peas then garnish
